The most popular grape variety in Istria, which is widely consumed and enjoyed, is light, dry, and refreshing. It has a straw yellow color, with a moderate scent of citrus fruit, fresh apples, and spring grass, with a hint of herbal notes. On the palate, it is of medium body, fresh, and characterized by the taste of roasted almonds, with a fruity aftertaste, layered complexity, creaminess, light saltiness, and a bitter finish.
It pairs well with a variety of dishes, from Istrian prosciutto, light cheeses, white meat, and light spring and summer pastas to oily fish, shellfish, and crustaceans.
