The wine bearing the signature of Mara Rožanić is not dedicated to her work in the winery but rather to her love for fine gastronomy and her longstanding contribution to the restaurant kitchen. She started as a chef's assistant and, thanks to her family experience in preparing various dishes, she decided to make a radical change from her planned career. Determined to refine her culinary skills, she enrolled at Le Cordon Bleu in London, where she graduated with a Master Patisserie degree. Mara now creates a completely new gastronomic/bistronomic world that perfectly complements our winemaking artistry.

It is clear that Roxanich Mara 4/6 must be a truly special wine. In its genre, Roxanich Mara 4/6 represents a rarity. Not only because of its limited quantities but also because it redefines the entire category of rosé wines. The red variety Borgonja, in its rosé expression, develops complexity and intricate sensations over time that young rosé wine cannot achieve.

Roxanich Mara 4/6 is a unique interpretation of the indigenous Istrian variety Borgonja, which achieves exceptional results in the iron-rich Istrian terra rossa soil.

After a brief maceration, literally limited to the time needed for pressing the Borgonja grapes, spontaneous fermentation completes the wine, which is then rounded off through time spent in large neutral vessels. Ten years of aging sounds incredible in the context of rosé wine, but the most important moment is the extraction during contact with the grape skins. Carefully nurtured Borgonja grapes have preserved and transferred all the characteristics of the vintage and their terroir into the wine, and the cellar aging has preserved and intensified all these sensations into a new complex life in the glass.

The brilliance of aged Borgonja rosé wine is something special, something decadent and magical. The aromatic spectrum is a kaleidoscope of colors and shapes that range from elderflower, dark red fruit, hints of cotton candy, to pomegranate with subtle buttery notes - a blend of two masters: mature rosé wine, dry and smooth on the palate, yet still astonishingly fresh and unusually expressive in its terra rossa mineral character.

Conceptually different rosé and the talent enriched by our Master Patisserie experience inspire each other. The layers, structure, and complexity allow for playful pairing with culinary creations.
