Roxanich Sara 3/6 is a wine that defies conventional definition. At first glance, instead of amber or old gold color, a shimmer of golden hues emanates from the vibrant orange. Superficially, it is easy to mistake Sara 3/6 for an oxidative style from the French Jura region, but there is none of that patina in this wine.
Defiant, unorthodox, judiciously macerated Chardonnay... in each bottle, the wine is left to ferment in contact with the grape skins for a period ranging from five to twenty-one days, depending on the harvest. "That is the period that is best for Chardonnay," says Rožanić. "The skins and seeds provide a beautiful range of colors."
Is Sara 3/6 yet another successful amber-colored extended maceration Chardonnay and another of Mladen's atypical interpretations of classics? Time will tell. But what we are certain of is its name, perfectly in line with the nature of Sara Rožanić, inclined towards the unconventional.
The process is also seemingly straightforward: when our Chardonnay arrives at the winery, the stems are removed from the grapes. Then, the must is transferred to barrels where it enriches the wine through extraction from the skins and seeds.
Upon completion of fermentation with indigenous yeasts, Roxanich Sara 3/6 is once again transferred to large wooden barrels to further mature over time. Roxanich Sara 3/6 may be our most direct wine: from nose to palate, Sara overwhelms the senses with a beautiful amber shade and intoxicating aromas of nutmeg, almonds, and jasmine.
The unique flavor bursts with freshness, citrusy and mineral sensations. Unexpectedly direct, omnipresent in its opulent and full-bodied taste, yet equally complex and profound. Roxanich Sara 3/6 leaves a taste of nuts in the aftertaste, with pleasant tannic reflections and an oily texture.
